I thought so too, Petard. The last video was information and visual overload for a windshield that you are supposed to be looking through. I was happy to see they simplified that mess for what they are demonstrating now.

Pay attention to that video again, the vehicle was in Autonomous mode and when the vehicle was changed into manual driving mode all that extra information went Poof.

Does engaging Ultra Cruise equal Autonomous Mode? Assuming it does, would I as the driver want all the video game graphic effects on my windshield? I suppose it's one way to keep me looking forward, haha.

These videos are by Envisics not GM, so it is imagining an imaginary full level 5 Autonomous drive(not Ultra Cruise not FSD...) with a manual mode the driver can engage.
